Buffalo, NY

If you know anyone from Buffalo, you know they are Buffalo Proud!  I have been designing new items to reflect our wonderful city.  First up: Buffalo beer and wine glasses!  Mix and match a set- 1 beer and 1 wine glass, or 2 of the same only $14!

There is a lot to do and see here in and around Buffalo, NY!  Please check back often as I will be highlighting different areas around Buffalo and some of my Buffalo themed items.

Chicken Quesadillas

Ok, I’ve never posted a recipe.  But, last night I made chicken quesadillas and they were soooo good!

Even during the winter, we have a few busy evenings with softball and Girl Scouts, so I’m always looking for something quick and easy.  Now, this was even easier for me using my Panini maker.  I’m sure you can make it in a frying pan, you’ll just have to flip it!

You’ll need tortilla shells, shredded rotisserie chicken, shredded Mexican cheese and salsa (and sour cream if you prefer to dip in that!).

Put some chicken and cheese on 1/2 the tortilla and fold in half. Place in Panini make.  Done in less than 5 min!  Told you it was easy…and very tasty!  I never thought to take a picture of them (like I said, I don’t post recipes, so I don’t think to take food pics) but I was able to grab a shot of the last wedge of my youngest daughter’s (she’s a slow eater!).

SNovember

Ok, so it’s been a while!  Every time I think I’m going to stay caught up, I realize it’s been MONTHS since I’ve posted!

Some of you may have seen the news that Buffalo got hit with a crazy lake effect snow storm last month- dubbed Snovember.  Where I live, we ended with an official total of 78″ of snow!  With 3-5” per hour, and it snowed for hours, we got buried!

We were woken up at 5am by a call from school saying it was closed..

I took pics every couple hours:

And it just kept snowing and piling up….then it fell

My husband worked hard to keep the driveway clear, so that when it did finally stop snowing, we wouldn’t be completely buried!  We woke up the next day to some sun, and lots of white!

We spent the day shoveling. More snow came and we shoveled some more. The plows finally came, well, not plows but payloaders and bulldozers, then the plows! Towns from the north sent their plows to help.  Neighbors helped neighbors shovel and those that could get out made trips for milk and bread for those still buried.

We finally saw the street on 11/21 and the driving bans were lifted.  First stop- Wegmans for some milk! (and essentials for the neighbors!)

Geocaching

Has anyone tried this?  I signed up for it a few years ago (with an account through geocaching.com) but this was before I had a smart phone and I wasn’t going to buy a handheld GPS unit.  Fast-forward to iPhones and Apps….

Softball is over and we were looking for something to do- I hear a lot more about geocaching on the Girl Scout sites lately.  Thanks to apps and the location devices on our smart phones, you can download and app and find caches.  What are they?  They are containers ranging in size from nanos and micros (think the size of your thumb!) to large ammo boxes.  They will have a log book to sign, and maybe some little items to trade!  Use the app to find caches close to you, and go for a walk…or a hike!  They are EVERYWHERE!  According to geocaching.com, there are over 2,400,000 caches hidden worldwide!

We started looking for caches at the end of July and have over 25 finds so far.  We just hid our 2nd cache today!  We just got our first travel bug and can’t wait to activate it (these are items that travel from cache to cache and their adventures get logged).

You can follow our adventures on Instagram at my.journeys.thru.selfies

Last week we spent the day in Canada at Niagara on the Lake and the Clifton Hill area at Niagara Falls.  Of course, we had to find  a few caches while we were there, and we’re now “international” cachers! 🙂

You can find out more at geocaching.com and maybe start your own adventures!

Florida

Back over the winter, we tossed around the idea of a family vacation and figured we could do it!  I searched, planned and booked…then we waited.  I didn’t want to say “I can’t wait” because I wasn’t going to wish away our summer.  But summer went fast as it always does and it was time to go. First time the girls were on a plane!

We flew out on Tues, had a lay over in Atlanta, and arrived in Tampa 10 min early…but there was a bad lightning storm and they couldn’t unload the luggage so we sat around for over an hour waiting to collect our luggage! Finally arrived at our hotel at 8pm.

Day 2 we took a shuttle to Shell Key Island.  We found lots of shells and saw manatees!  Then we headed to Clearwater Beach so the girls could swim in the Gulf!

Day 3 we headed to Orlando…MAGIC KINGDOM!  I am not a huge fan of crowds or amusement parks…so one day at Disney World was enough for me.  Juli is very into the Princesses and couldn’t wait to see her favorite, Belle.  Rae wanted to see Mike and Sully at the Laugh Floor and Nina’s (and mine) favorite turned out to be Space Mountain!  We rode lots of rides, including Thunder Railroad, Haunted Mansion, Splash Mountain (not me!), Pirates of the Caribbean, among others.  Saw the Electric Parade and the fireworks.  It was a very long day (up at 5am and returned to the hotel at 1am).  But, we did everything we wanted to do…including trying the Dole whip!

Day 4- we slept in a bit on Friday! LOL  We started to the day out at the pool, then headed to Honeymoon Island and back to Clearwater Beach.  We hung around at Pier 60 for the little craft show and saw a gorgeous sunset!

Day 5- Today we headed to the Weedon Preserve.  We saw LOTS of crabs and an armadillo!  Then we spent most of the afternoon at St. Pete beach.  A spur of the moment decision had us back in Clearwater to take a dolphin cruise with Mega Bite!  It was fun and we got to see several dolphins!!

Day 6- We headed to Lakeland to the Circle Bar B Reserve.  I found it in a travel book as a good place to see alligators- one thing Nina really wanted to see while in FL.  We headed out on the trails and heard them.  What a weird sound!  Then, I spotted one!  A wild gator!  It was quite the experience!  We ended up seeing 5 of them along the Alligator Alley trail!  Saw lots of osprey too!  From here, we headed to visit our family that lives outside of Tampa!

Day 7- we headed out early and spent the day along the East Coast.  Swam in the Atlantic at Jetty Park (Cape Canaveral), stopped at the Cocoa Beach Pier and drove up to see the space center!

It was a great week and we were able to fit so much in!  I took over 1300 pics and put 907 miles on the rental car!!  I will be updating my photography website very soon with more pics from our trip!  I hope you’ll stop by and take a look!

First day of school

I know I promised you a post about Florida…and it’s coming very soon.  I just had to put up one of the first day of school.  Very special day today.  All 3 girls are in school this year.  Juli starting kindergarten, Rae in 4th and Nina in 7th in middle school!
